PlexConnect and Apple TV 3 not working with 5.1 Audio
Quite distressed I was when I couldn't get any sound to work with 5.1 Plex, PlexConnect and my Apple TV. However, an easy fix, simply disable the "Enable Dolby Digital on Apple Tv" option.
